Keto Chorizo Egg Muffins

Egg muffins are a keto staple in my house. They’re easy to take in lunchboxes or to grab as you’re running out the door. What could be more convenient? Have a batch at the ready in the fridge.

These low carb chorizo & pumpkin egg muffins are somewhat unique because the recipe is from my new Quick Keto cookbook which is all about convenient keto cooking: quick, easy-to-prepare meals that even a complete novice can make. No matter how busy your life might get, you can always find time to eat healthy meals.

Keto Golden Turmeric Iced Latte

A summer twist on an anti-inflammatory classic. It always make me laugh why a golden milk latte is called a latte because it doesn’t contain any coffee! Turmeric is way better for you than coffee anyway.

Turmeric is a powerful adaptogen and just like ginseng, green tea, maca or ashwagandha, it’s great for your health in so many ways (More about health benefits is in the original recipe for hot Golden Turmeric Milk).

Need another excuse to give this Keto Iced Golden Milk Latte a try? Ok, one more, it tastes delicious! It’s dairy free too so if you’re Keto Vegan this one’s for you.

Preparation time
Hands-on:    10 minutes

Ingredients (makes 4 regular or 8 small servings)

Note: a regular serving is 1 cup, a small serving is ½ cup.

Instructions
  1. Grate the ginger and turmeric. I’d recommend using protective gloves as the turmeric will stain your fingers. Same applies to your kitchen work top or chopping board so best to avoid your most loved surfaces.
  2. Place the coconut and almond milk in a pan . Add the grated turmeric, ginger, vanilla, black pepper. Optionally, add erythritol and MCT oil (extra energy boost).
  3. Bring to the boil and simmer for 5 minutes. Turn off the heat and allow to stand for 5 minutes. Strain through a muslin cloth and discard the spices. Option to add the extra coconut oil, my favourite, stir and pour into a hand blender and pulse until frothy.
  4. Allow to cool. Option to then place in the fridge for approximately 15 minutes until chilled. Place ice in a glass and pour over the Dairy Free Iced Golden Milk Latte.
  5. Store in an airtight container in the fridge for up to 5 days. The spices will settle, so simply give the golden milk a quick stir before serving.

Tangy Keto Kale Slaw

I’m one of those weird people who actually loves kale. I’d rather eat kale than lettuce in most dishes. And why not? Kale is one of the original superfoods, and with good reason. It’s packed full of vitamins, minerals and nutrients.

This kale-slaw is a great way to incorporate it into your family’s meals. It’s a side dish that is bursting with colour, flavour and crunch with just a hint of tanginess from the dressing. Serve it alongside a lovely steak or pop it in some tacos, it’s very versatile. Healthy, fresh and pretty too, it’s bound to become a favourite.

Preparation time

Ingredients (makes 6 servings)
  • 1 bunch of kale (170 g/ 6 oz) - I use dark leaf Cavolo Nero, or Tuscan Kale
  • 2 ½ cups shredded red cabbage (175 g/ 6.2 oz)
  • 1 ¼ cups shredded green cabbage (90 g/ 3.2 oz)
  • ½ cup grated carrot (55 g/ 1.9 oz)
  • ¼ cup pumpkin seeds, aka pepitas (32 g/ 1.1 oz)
  • ⅓ cup mayonnaise (73 g/ 2.6 oz) - you can make your own
  • 1 tablespoon lemon juice or apple cider vinegar, or to taste
  • salt and pepper if desired
Instructions
  1. There’s no rocket science going on here. Finely slice the kale and place in large bowl.
  2. Using a sharp knife or mandolin, thinly slice the red and green cabbages.
  3. Grate the carrot. Add all to the kale in the bowl. Combine thoroughly with salad tongs or your hands.
  4. Serve dressed with mayonnaise, lightened up with lemon juice or apple cider vinegar to taste. I like to drizzle my dressing over the top, but feel free to mix it right through. Finish off with a sprinkle of pepitas. Serve immediately or refrigerate for up to 3 days.

Nothing says the end of a meal like a good cheeseboard. These Keto rosemary and onion crackers are the perfect accompaniment. They’re moist, crumbly and just like the real deal but without the grains. Taste delicious simply on their own with a little raw butter, stacked with your favourite cheese or why not take them for a snack when you’re on the go?

So easy to make and keep well in a tupperware too, though I have to be honest mine never make it past the end of the day!

Ingredients (makes 11-12 crackers, 3-4 servings) Instructions
  1. Preheat the oven to 170 C/ 340 F (fan assisted). In a Vitamix, blitz the flax seeds to a flour consistency or alternatively you can buy ground flax seeds. Chop the rosemary leaves up fine.
  2. Add the ground almonds, flax, chopped rosemary, onion powder, bicarbonate of soda, salt and pepper to a large bowl and mix.
  3. In another bowl, crack open the egg and whisk with the extra virgin olive oil. Add the wet ingredients to the dry and mix until combined.
  4. Roll the grain free dough into a ball and place between two sheets of greaseproof paper.
  5. Using a rolling pin, roll the dough flat, about ½ cm (¼ inch) thick.
  6. Using a cookie cutter, press out your biscuits and place on a greaseproof lined baking tray. Roll up the left over dough and repeat the previous step as any times as necessary until you have used up all the dough.
  7. Bake in the oven for 12 - 15 minutes until golden. Allow to cool on a wire baking rack before serving. Top with butter and your favourite cheese for the ultimate Keto cheeseboard.

Bell Pepper Cauliflower Casserole

Ingredients
Puree:
  • 1head cauliflower
  • 2tbs heavy cream
  • 1tbs butter
  • 1/4cup sharp cheddar cheeseshredded
  • 1 1/2tbs Bell pepperschopped
  • 1/4tsp Garlic powder
  • 1tsp Salt and pepper to taste
Cream cheese layer:
  • 6oz cream cheesesoftened
  • 1/2cup shredded cheddar cheese
  • 1/4cup salsa verde
  • For the topping:
  • 3/4cup Colby Jack Cheeseshredded
  • 1/4cup Bell peppersDiced
Instructions
Puree
  1. Clean and trim the cauliflower, breaking it into medium sized pieces. Place in a microwave safe bowl with 2 Tbsp of cream and 1 Tbsp of butter. Microwave, uncovered, on high for 10 minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for another six – eight minutes on high (or until cauliflower is tender). Remove from the microwave and put into a high speed blender or food processor along with the cheese, peppers, and garlic powder. Puree until smooth (or you can leave it chunky if you prefer. Season generously with salt and pepper to taste.
Cheese layer:
  1. Put the cream cheese in a microwave safe bowl and nuke for 30 seconds to soften. Add the shredded cheese and salsa verde, mixing thoroughly. It should be very spreadable - if not, nuke for a few more seconds.
Assemble the casserole:
  1. In a medium-sized oven proof dish (approximately 8 x 8), spread out a thick layer of cauliflower puree. Spread the warm cream cheese mixture on top of the puree. Top with a layer of shredded Colby jack cheese, and diced peppers. Bake at 375 degrees for about 20 minutes, or until the cheese is completely melted. You can finish it under the broiler for a couple of minutes to brown further if you'd like. Alternatively, microwave on high for about 6 - 8 minutes, or until the cheese is melted and the casserole is heated through. Serve hot.
