I'd like to introduce Ankita Nimbalkar, a fellow blogger and the creator of KetoWoman91. Over the next couple of weeks, Ankita will share two of her favourite low-carb recipes inspired by Indian cuisine. The first recipe are simple & delicious keto and paleo bars that are ideal for fat fasting!

Indian cuisine holds a proud place in the list of distinguished cuisines of the world. With all its exotic ingredients, unfamiliar dishes, and tongue-tingling flavours, Indian Cuisine can be both exciting and intimidating. It uses the whole palette of flavours - spicy, sour, sweet and hot all at the same time making it something that wants to jump off the plate. Contrary to common belief, not all Indian dishes are curries. It is also very famous for sweets and desserts.

Being born an Indian, I have always enjoyed and relished our rich dishes full of flavour and taste. When I started Ketogenic diet, one thing I knew was to never compromise the taste with this diet. I made sure that my food is not boring. I make many Indian versions of Ketogenic dishes, and here to present you a very famous sweet of India – Coconut Barfi/ Coconut bar.

A barfi is nothing but dense milk based sweet confectionery from India, a type of sweet. Coconut barfi is a traditional Indian sweet made in almost all parts of India. It is very easy to make, and just needs few ingredients.

Preparation time:
Hands-on:     35 minutes
Overall:      3 hours 
Nutritional values (per serving):
Total Carbs 3.2 grams
Fiber 1.7 grams
Net Carbs 1.5 grams
Protein 2.4 grams

Macronutrient ratio: Calories from carbs (4%), protein (6%), fat (90%)

Ingredients (makes 15 servings): Instructions:
  1. Take a bowl and mix the coconut flakes with 300 ml (1 ¼ cup/ 10.1 fl oz) of coconut milk. Keep this mixture aside for 30 minutes.
  2. Take remaining 20 ml (0.7 fl oz) coconut milk; add the saffron threads and the erythritol. Mix it properly for the sugar to dissolve.
  3. After 30 minutes, heat a wok and melt the ghee in it. Add the coconut mixture, and keep mixing ensuring the flame is at low and the mixture does not stick to the surface. Keep mixing for 5-7 minutes.
  4. Add the Elaichi / cardamom powder and cook the mixture for another 5 minutes.
  5. Take a baking tray/ barfi tray, butter it and spread the mixture evenly, up to 1 cm thick. Freeze it for 2 to 2 ½ hours.
  6. Cut small squares according to your own liking and the barfi is ready.

  1. Prepare the coffee and keep warm.
  2. Pour the coconut milk in a small sauce pan and mix in the cocoa powder, Erythritol, cinnamon, vanilla, cardamom and cayenne pepper. Bring to a simmer, and cook for a minute before taking off the heat.
  3. Pour in the coffee, add coconut oil and whisk until combined. Enjoy hot ... ... or dress it up with some whipped cream or coconut cream :-)

For my review, I chose Morning Hot Pockets from the Breakfast in Five eBook. They are filled with scrambled eggs and crispy bacon but you can use anything you like - even sweet fillings would work. I made them a week ago while my mom was visiting, and she couldn't believe they were low-carb. They tasted just like the breakfast pockets she buys at a local bakery back in Prague.

Preparation time:
Hands-on:    10 minutes
Overall:     30 minutes
Nutritional values (per serving):
Total Carbs 5.1 grams
Fiber 1.6 grams
Net Carbs 3.5 grams
Protein 28.2 grams

Ingredients (makes 2 servings):
  • ¾ cup shredded mozzarella (85 g/ 3 oz) - use low-moisture, part-skim, shredded mozzarella cheese; not fresh mozzarella.
  • ⅓ cup almond flour (33 g/ 1.2 oz)
  • 2 large eggs, scrambled
  • 2 tbsp unsalted butter or ghee (28 g/ 1 oz)
  • 3 slices bacon, cooked (48 g/ 1.7 oz)
Instructions:
  1. Cook the bacon and eggs. Prepare the dough: melt the shredded mozzarella (in a microwave oven or on the stove over a low heat) & add the almond flour. Stir until the dough is well-combined.
    To crisp up bacon: Place the bacon strips in a large pan and add a few tablespoons of water. Cook over medium-high heat until the water starts to boil. Reduce the heat to medium and cook until the water evaporates and the bacon fat is rendered. Reduce the heat to low and cook until the bacon is lightly browned and crispy.
    To scramble eggs: Grease the skillet where you cooked the bacon with half of the butter or ghee and add both eggs. Cook over a medium-low heat until opaque, stirring constantly. Take off the heat and then add the remaining butter.
  2. Roll the dough out between 2 sheets of parchment paper (I used a silicon mat and silicon rolling pin).
  3. Place the bacon slices and scrambled eggs along the center (I cut my bacon into pieces).
  4. Fold over and seal the dough. Make some holes for releasing the steam while baking.
  5. Bake at 400 F (200 C) for about 20 minutes or until golden brown and firm to the touch (I baked mine for just 15 minutes).

Plums, ginger, orange and cinnamon, simplicity at its best. Perfect for breakfast or pudding. These baked plums with ginger and orange are the ultimate tasty, speedy treat and with plums in season now, it’s super cheap to make. It’s preferable that the plums are slightly underripe, otherwise they will over cook and fall apart… though this still tastes awesome too! Serve with either Greek or coconut yoghurt.

Preparation time:
Hands-on:    10 minutes
Overall:     20-30 minutes
Nutritional values (per serving, 6 slices):
Total Carbs 7.3 grams
Fiber 1.1 grams

Ingredients (makes 6 servings):
  • 5 firm plums, pitted (330 g/ 11.6 oz)
  • 2-inch ginger, peeled (18 g/ 0.6 oz)
  • ½ tsp of cinnamon
  • zest of 1 large orange
  • 5 tbsp of water (75 ml/ 2.5 fl oz)
  • 10-15 drops liquid stevia, or to taste
  • Serving suggestions: serve each portion with 2-4 heaping tablespoons of full-fat Greek yoghurt or Coconut yogurt (you can make your own)
Instructions:
  1. Preheat oven to 375 F (190 C fan assisted). Wash the plums. Slice in half and remove the stones. Cut into segments. Roughly 8 segments per plum and place on a baking tray.
  2. Peel the ginger, grate and place in a bowl. Zest the orange. Add to the bowl with the ginger, cinnamon and 1 tablespoon of water. Pour over the plums and mix well.
  3. Rearrange the plums on the baking tray, flesh side down so the plums don’t overlap. Bake in the oven for about 20 minutes. If your plums are riper they will need less cooking time, approximately 10 minutes in total. Remove from the oven and serve warm or cold, your choice, with coconut or Greek yoghurt. Option to drizzle with a little honey if you like things sweeter.

Paleo Carrot & Sesame Falafel

Traditionally falafel are made with chickpeas which are a no go whilst on a low-carb, paleo diet. These Baked Carrot and Sesame Falafel are Jo’s legume and grain free version… and they’re delicious.

A great addition to your weekday lunchbox. They’re super simple to make, can be enjoyed warm or cold, so you can keep a batch in the fridge to enjoy during the week.

The falafel have so much flavour thanks to the wonderful spices of coriander, cumin and fresh lemon and are so moist from the gooey tahini, olive oil and coconut flour. Perfect snacking food smothered in guacamole or tzatziki or enjoy with a nice salad.

Preparation time:
Hands-on:    30 minutes
Overall:     50 minutes
Nutritional values (per serving, 3 falafel):
Total Carbs 18.5 grams
Fiber 6.9 grams
Net Carbs 11.6 grams
Protein 5.4 grams
Fat 22.5 grams
of which Saturated 4.6 grams
Energy 292 kcal
Magnesium 49 mg (12% RDA)
Potassium 513 mg (26% EMR)

Macronutrient ratio: Calories from carbs (17%), protein (8%), fat (75%)

Ingredients (makes 4 servings, 12 falafel):
  • 3 cloves garlic
  • 5 tbsp extra virgin olive oil (75 ml)
  • 450 g carrot (15.9 oz)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp fresh lemon juice
  • ⅓ cup + 1 tbsp coconut flour (50 g/ 1.8 oz)
  • 1 ½ tbsp tahini paste (24 g/ 0.9 oz)
  • small bunch fresh cilantro, stalks removed (20 g/ 0.7 oz)
  • salt and pepper to taste
  • 2 tbsp sesame seeds (18 g/ 0.6 oz)
Instructions:
  1. Preheat the oven to 400 F (200 C, fan assisted). Place the garlic on a baking tray and drizzle with 1 teaspoon of olive oil. Bake for 12 minutes until soft. When cooked remove from the oven, allow to cool and remove the skin.
  2. Meanwhile, peel and remove the tops from the carrots. Chop into 2cm chunks. Place in a steamer over a pan of boiling water and steam for 18 minutes until soft. Option to simmer on a low heat in a pan of boiling water if you don’t have a steamer for about 12 - 15 minutes. Once cooked, remove the carrots from the steamer/ drain from the pan of water and allow to cool slightly.
    Place the carrots, peeled garlic, cumin, ground coriander, 3 tablespoons of olive oil, lemon juice, coconut flour, tahini, 1/2 of the finely chopped coriander, salt and pepper in a food processor like a Magimix or Vitamix and blitz.
  3. You might need to scrape the sides with a spatula and blitz again until almost smooth. Fold in the remaining chopped coriander. Using your hands, roll into falafel shaped balls, about 2 cm in diameter. Coat in sesame seeds and place on a baking tray lined with grease proof paper.
  4. Brush with a little olive oil and bake in the oven for 10 minutes. Turn and cook for a further 10 minutes until golden. Enjoy!
