Hi everyone! My story is long however I will try to keep it short. In 2006 I was diagnosed with fibromyalgia and CFIDS as a result of several chronic infections that had destroyed my immune function.

There’s nothing quite as comforting as a good sausages and mash. This low carb Keto-friendly mash made with celeriac and cauliflower is the creamiest, dreamiest alternative to the humble potato. Made with butter and then blitzed in a blender makes it so silky smooth you’ll never crave starchy spuds again!
Topped with a mushroom and red wine jus it’s comfort food at its best. If you’d prefer more of a gravy, simply add a teaspoon of arrowroot to thicken it. Make sure you choose the best quality sausages, without any breadcrumbs, just pure meat, herbs and spices to give the best flavour.

Ingredients (makes 2 servings) Sausages:
4 medium gluten-free sausages (200 g/ 7.1 oz)
¾ small red onion (45 g/ 1.6 oz) - use the remaining onion in the gravy
Prepare the sausages. Cut the sausages in half lenghtwise (option to leave whole if you prefer) and place on greaseproof lined baking tray.
Peel the onions, slice into wedges and place on the same tray as the sausages. Drizzle the onions in a little ghee or olive oil (approx. 1 tablespoon) and toss.
Roast the sausages and onions in the oven for 30 minutes until cooked through. Cooking times will vary depending on how crispy you like your sausages and whether you cut them in half or left them whole. Just ensure they are fully cooked with no pink meat.
Prepare the gravy. Slice the mushrooms. Peel and finely dice the onion. Heat the butter or olive oil in a pan on a medium heat and sauté the mushrooms for 2 minutes. After 1 minute of cooking time add the onion for 1 minute. Add the stock, herbs and red wine and allow to simmer for about 15 minutes until the sauce reduces and becomes concentrated. This is how you get more flavour. If you prefer a thicker gravy, before you start add a little stock to a cup and mix 1 teaspoon of arrowroot to form a paste, add a little more stock until mixed well, stir into the mushrooms until smooth and then stir in the rest of the stock and allow to reduce as indicated above.
Prepare the mash. Whilst the gravy is cooking, place a boiling pan of water on the hob. Remove the skin, stalks and leaves from the cauliflower and celeriac. Chop into chunks, about 2 cm in diameter and add to the hot water with a pinch of salt. Boil for 15 minutes until soft, but still with a bite.
Once cooked, drain the water, dry off on the heat and then transfer to a high speed blender or food processor. Pulse in short burst until smooth, you may have to scrape the sides a few times with a spatula. Do not blend on full or you will end up with soup! Option to use a hand blender or masher. (It just won’t be as smooth but still tastes good!) Place the low carb mash back into the pan and stir through the butter or olive oil. Season to taste with salt and pepper.
Place the Keto mash in a bowl, top with sausages and mushroom red wine gravy.
Make some fabulous Salsa, also know as PICO de Gallo! This is an easy recipe to make the perfect, delicious tasting salsa!
It doesn’t get an easy then this to make fresh garden salad at home! I love the taste of fresh veggies straight out of the garden! This is great for baked chicken, scrambled eggs, making bell pepper nachos and for dipping veggies.
Makes 2 1/2 cups salsa and keeps in the fridge for about a week.

Keto Grilled Cheese Made With 90 Second BreadThis is what was for lunch today! A delicious grilled cheese with the easiest keto bread ever! So simple and quick to make!
Best keto approved bread!
I decided to make some 90 second bread today because it’s super simple to make and tastes amazing! I wanted to make a yummy grilled cheese and I knew this keto approved bread would be perfect!
For the grilled cheese, I made my 90 second bread first and then cut it in half. I usually make it in a round dish, but today I make it in a sandwich shaped container so that it actually had the same shape as a regular piece of bread. If you are using a small container when you microwave your keto bread it turns out thick enough to cut in half with a bread knife to easily make two pieces.
I then spread some butter on each piece. I placed the first slice in the frying pan, butter side down. I placed some cheddar cheese on it and put the second piece on top, butter side up, for when I flip it. Cooked a couple of minutes on each side and done! Overall this made a nice quick lunch that was amazing and delicious!
Yesterday I made my 90 second bread into a sandwich. I toasted it as well, before making my sandwich. It turned out perfect!
You don’t have to toast your 90 second bread, you can eat it as is, out of the microwave. It’s all about personal preference. You can top it with anything you like that is keto approved. Makes great egg, bacon and cheese breakfast sandwiches as well! Use your imagination, there are so many options!

If you can eat nuts, you can follow the original recipe that is made with almond flour - you will only need 4 ingredients: shredded mozzarella, almond flour, ham and cheese - that's it!

Cheesy Bacon Roasted CauliflowerThis recipe is to die for! All your favorite flavors infused into one amazing recipe perfect for your keto diet!
This was originally a high carb potato recipe that I use to eat sometimes. With my keto lifestyle I don’t eat like that that anymore so I converted it to a low carb recipe. The best part is, it tastes even better made this way! This is so simple to make and tastes amazing! I am quite sure you will love it!
Meatballs are one of my favourite low carb dinner go-tos... and these ones will not disappoint. Packed with flavour and super easy to make. Serve with the dairy free basil pesto for a real crowd pleaser.
Can be baked or pan fried and freeze really well so you can make up a big batch for when you’re busy and need something Keto-friendly on the quick.
Enjoy as a side or picnic food now the weather’s getting warmer or why not serve with some low carb mash or courgette (zucchini) noodles? Weekday winner dinner right here!

Simply place all the ingredients in a high speed food processor. Blitz until combined. It should still have textured, so not too smooth.
Peel and finely dice the onion and garlic. Zest the lemon. Finely chop the parsley.
Place the mince, onion, garlic, lemon zest, parsley, paprika and optional chilli in a bowl. Season with salt and pepper and mix well with your hands. Shape into 16 to 20 meatballs.
To pan fry - Add a little olive oil to a non stick frying pan. When hot add the meatballs. Fry for 15 minutes, turning regularly until golden on the outside and cooked through. Alternatively you can place on a greaseproof lined baking tray and roast in the oven (190 C fan assisted/ 375 F) for 20 - 30 minutes until lovely and golden brown.
Drain the juices after about 15 minutes and turn. Serve the pesto over the meatballs or on the side for dipping.
This is my simplified, low-carb version of a Greek favourite - Spanakopita, a delicious savoury pie filled with spinach and feta cheese.
It's adapted from Keto Morning Hot Pockets which went viral over the social media. Based on several requests, I made the pockets nut-free by using flax meal instead of almond flour. Because flax meal is more absorbent than almond flour, I also added some cream cheese. If you can eat nuts, you can follow the original recipe that is made with almond flour - you will only need 4 ingredients: shredded mozzarella, almond flour, spinach and feta - that's it!
